Totally famished after my hour long run in the morning, I made a super spontaneous breakfast for myself today.  I wanted to eat healthily, but a cold salad was simply not appealing. With hardly anything else on the shelves, I had to use quinoa that’s been sitting in the kitchen for a while now. Somehow using these grains in a bowl of salad on a November morning left me cold. A little bit of warmth and spice takes me a long way in this weather, and so I went ahead and made myself a bowl of quinoa pilaf loaded with vegetables, and it tasted so good, that I easily forgot about the quinoa in it, just the taste of pilaf lingered. So if you are also running late for office (just like me), doty this out. This pilaf is a protein-rich, gluten-free delicious dish and is very quick and easy to make.

Here’s how I cooked my bowl.

Quinoa Pilaf

Ingredients

1 cup quinoa
2 cups water
5 peppercorns
3 cloves
2 crushed cardamoms

Pinch of turmeric
pinch of salt

For Sautéing

2 tbs oil
1 1/2 cups diced vegetables of choice (I used some broccoli florets, 1 green bell pepper, 1 medium zucchini, 1 small carrot and a handful of beans)
1 medium onion – diced
1 tsp grated ginger

1 tsp garlic paste
1/2 tsp turmeric powder
1/2 tsp Jeera/Cumin powder
1 tsp Jeera/Cumin seeds
salt per taste
2 green chilies
1 Green chilly (slit for garnishing)
1 tbs chopped coriander (for garnishing)

Rinse 1 cup quinoa in a sieve a few times. Boil 2 cups of water in a pan along with cloves, cardamoms, and peppercorns. Add a pinch of salt, and add the rinsed quinoa to it. Cook on medium flame for about 20-25 minutes without stirring. Once the quinoa absorbs all the water, set it aside and fluff it with a fork.

In a medium skillet, heat oil over medium-high heat. Add the cumin seeds, and wait until the splutter. Now add the chopped onions, grated ginger, and the chilies. Next, add all the vegetables. Cook for 10 minutes or until vegetables is tender, stirring occasionally. Stir in garlic, turmeric powder, and cumin powder- cook for another minute. Once the vegetables are cooked add the semi-cooked quinoa and fold it in. cook and mix well for 5 minutes. Take it off the flame, garnish it with the chilly and coriander leaves and relish J
